Mandazi (Donut-Like Snack)

A little taste of Kenya from World Gospel Mission’s International Cookbook

This version of mandazi combines the flavors of spice cake and donuts together. The WGM test kitchen gives this potential after-school snack a thumbs up. We would advise adding sprinkled powdered sugar as you see in the picture to the right. That little kick of sweetness was a nice addition. We could also see a sprinkle of cinnamon and sugar being a nice condiment. The recipe is true to form, making about a dozen small, snack-sized donuts. Grab some milk and enjoy!

Ingredients:

  • 1 1/4 c. flour
  • 2 T. sugar
  • 1 tsp. baking powder
  • 1 tsp. ground cardamom
  • Pinch of salt
  • 1 egg
  • 1/4 c. milk
  • Oil for frying

Makes about 1 dozen.
