Chicken and Rice (Arroz con Pollo)


A little taste of Costa Rica from World Gospel Mission’s International Cookbook

This sweet dish of chicken and rice doesn’t have the same makeup as you may have tried at your favorite Mexican restaurant. This version is a taste from Costa Rica and will give a unique twist to your chicken dinner night. The WGM test kitchen paired this dish with chips and guacamole, but the typical side dish for this meal would be potato chips. The salty chips would complement the sweet tone of this dish. Ingredients:

  • 1 lb. rice
  • 1 chicken
  • 1 tsp. salt
  • 1 small can peas
  • ¼ bell pepper, chopped
  • ½ tsp. garlic salt
  • 1 or 2 stalks celery, chopped
  • 1 onion, chopped
  • 1 small can tomato paste
  • ⅓ cup raisins

Instructions

Chicken and Rice (Arroz con Pollo): use rotisserie chicken, or cook your own

In the WGM test kitchen, we used a rotisserie chicken from our local grocery store for this recipe, but you could cook your own chicken if you would like.

Chicken and Rice (Arroz con Pollo): begin by chopping your veggies

Chop your veggies and add them to a pan, keeping out a small portion of the onion and bell pepper to use when you cook the rice. Add chicken (cut up), salt, and garlic salt. Add water and cook until chicken is tender. In another pot, use the shortening (we substituted olive oil) to fry the rice with the remaining onion and pepper. Add the water the chicken was cooked in and bring to a boil, then simmer until the rice is cooked and the extra water has boiled off.

Chicken and Rice (Arroz con Pollo): shred your chicken or cut it into small pieces

If you cooked your own chicken, cut the chicken into small pieces, but since we used a rotisserie chicken, we just shredded it and added it to the cooked veggies.

When the rice is cooked, add it and the tomato paste to the chicken mixture.

Next, add the peas and raisins. This combination really offers the sweetness to this dish.
